Eating well is one of the main attractions of São Luis, try the exotic Maranhão cuisine, it is almost a requirement.
Fish and seafood are the basis of local dishes. From stews, casseroles, to pies, fish, like sea bass and hake, are usually accompanied by ‘cuxá’, made with dried shrimp, manioc flour, toasted sesame seeds and vinegar. ‘Cuxá’ can also be served with rice, in the traditional recipe of Cuxá Rice.
